About Pasta Nights
Pastanights is a food blog focused on simple, tested recipes for everyday cooking.

Meet the author
Rosa Caruso
Rosa has fed this Brooklyn kitchen for forty years, through two funerals, three weddings and one flood. Her husband still sits at the counter every night waiting for the first twirl off the tongs, and she still loves him for it. She cooks pasta the way she loves: loudly, generously and without apology.
What you will find here
Pasta Nights is about weeknight pasta done properly: sauces built in the time the water takes to boil, a few fresh pasta projects, and the pairing rules that make dinner taste Italian.
How recipes get made here
Every sauce is cooked at least three times with dried supermarket pasta, timed against the boiling water, and finished in the pan the way it should be. Fresh pasta recipes are tested by hand and with a machine.
Some links on the site are affiliate links. If you buy through one, the site may earn a small commission at no extra cost to you. It never changes what gets recommended.

Pasta is the fastest good dinner there is. Every recipe here is timed from the moment you fill the pot.
